The BEST Cheesy Enchiladas EVER !!!!

Mexican Food !!! MIAM !!! 

I made these enchiladas yesterday and everyone loved it !!

its so easy and delicious. Even my 11 months baby loved it

You can even make it and freeze it, and when you take it out of the freezer, just add the enchilada red sauce, the cheese and put it in the oven!  

ingredients

2 handful of ground beef

diced half of onion 

1 can of refried beans

taco seasoning

6 tortillas

salsa

graded mixed cheese

optional toppings:

cilantro 

sour creme

salsa

guacamole

1. sautéed the onions on medium hight till is transluced

while ur doing that preheat the oven on 350f

2. add the meat 

3. when the meat is fully cooked, remove all the liquid. Add the beans and the taco seasoning

4.  now to assemble first take a tortilla spread a bit of salsa then add the beef mixture and finish with some cheese then roll the tortilla and put it in a casserole

do the same with the other tortillas

5. spread the enchilada sauce on the rolled tortillas add LOTS of cheese

Put in the oven till cheese starts to bubble then turn the oven to broil cook for another 5 min 

I served the enchiladas with a ranch salad and Mexican rice
